
Ingredients
- 1 lb. Ground beef
- 1 C. Uncooked elbow macaroni
- 1 Onion chopped
- 28 oz. Diced tomatoes undrained
- ⅔ C. Frozen corn
- 8 oz. Tomato sauce
- 4 oz. Can diced green chilis
- ½ tsp. Cumin
- ¼ tsp. Salt
- ½ tsp. Black pepper
- ¼ C. Chopped fresh cilantro
Instructions
- Boil the macaroni until it is done to your liking, rinse in cold water, and drain.
- Add the ground beef and onion to a skillet over medium-high heat on the stove, and cook until the meat is browned and onions have softened. Drain any excess grease.
- Reduce the heat to medium and add in the diced tomatoes, frozen corn, tomato sauce, green chilis, salt and pepper, and cumin. Stir to combine.
- Bring the mixture to a boil and then reduce the heat to a simmer for 10 minutes.
- Stir in the macaroni and cilantro, and stir to combine before serving.
