Pepperoni Pizza Quesadillas

Ingredients:

● 4 large flour tortillas
● 1 cup marinara or pizza sauce
● 2 cups shredded mozzarella cheese
● 24–30 slices of pepperoni
● 1/2 teaspoon dried oregano
● 1/4 teaspoon garlic powder
● Olive oil or butter for cooking
● Optional: crushed red pepper flakes, fresh basil for garnish

Directions:

I. Lay out two tortillas on a clean surface. Spread a generous spoonful of marinara sauce on each tortilla, leaving a small border around the edges.

II. Sprinkle 1 cup of shredded mozzarella evenly over the sauce on each tortilla.

III. Add 12–15 slices of pepperoni over the cheese layer, then sprinkle with oregano and garlic powder.

IV. Top each with another tortilla to create a quesadilla sandwich.

V. Heat a large skillet over medium heat and lightly grease with olive oil or butter. Place one quesadilla in the skillet and cook for 2–3 minutes per side, or until golden brown and the cheese is melted.

VI. Repeat with the second quesadilla, adding more oil or butter as needed.

VII. Let cool slightly, slice into wedges, and serve hot with extra marinara for dipping.
