Garlic-Lime Roasted Drumsticks
Crispy skin, no frying needed! These flavorful drumsticks are oven-roasted to golden perfection with a zesty garlic-lime kick.

 Ingredients:
8 chicken drumsticks (skin-on)

4 garlic cloves, minced

Zest of 1 lime

Juice of 2 limes

2 tbsp olive oil

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

½ tsp chili flakes (optional for a kick)

Fresh cilantro or parsley, for garnish

 Instructions:
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a rack on top (for even roasting).

Prep the marinade: In a large bowl, whisk together lime juice, lime zest, garlic, olive oil, smoked paprika, salt, pepper, and chili flakes.

Marinate the chicken: Add drumsticks to the bowl and toss to coat well. Let marinate for at least 20–30 minutes (or up to overnight in the fridge for deeper flavor).

Arrange drumsticks on the rack, making sure they aren’t touching. Pour any extra marinade over the top.

Roast for 40–45 minutes, flipping halfway through, until the skin is crispy and browned, and internal temp reaches 165°F (74°C).

Optional broil: For extra crisp, broil for the last 2–3 minutes—but watch closely!

Garnish with fresh cilantro or parsley and serve with lime wedges.

Serve with roasted veggies, rice, or a fresh avocado salad.
