Ingredients (Serves 8):
1 unbaked 9-inch pie crust (homemade or store-bought)
1 (14 oz) can sweetened condensed milk
3 large eggs
1/4 cup unsalted butter, melted
1/2 cup light brown sugar, packed
1 tsp vanilla extract
1 1/2 cups pecan halves
Optional Toppings:
Whipped cream
Extra toasted pecans
Directions:
Preheat oven to 350°F (175°C). Place the pie crust into a 9-inch pie dish and crimp the edges. Set aside.
In a medium bowl, whisk together the sweetened condensed milk, eggs, melted butter, brown sugar, and vanilla until smooth.
Stir in the pecan halves and pour the mixture into the prepared crust.
Bake for 45–50 minutes, or until the center is just set and the top is golden brown. Shield the crust edges with foil if they begin to darken too quickly.
Let the pie cool completely before slicing—this allows the filling to set.
Serve plain or with a dollop of whipped cream and a sprinkle of pecans.
