Ingredients
400 g cod fillets (2 large pieces or 3 small)
1 tbsp olive oil
1 tsp garlic powder
½ tsp turmeric
½ tsp paprika
Salt and pepper to taste
For the Sauce
1 tbsp olive oil
2 garlic cloves, minced
200 ml full-fat coconut milk
1 tsp lemon zest
2 tbsp lemon juice
1 tsp cornstarch (optional, for thickening)
1 tbsp chopped fresh parsley or cilantro
Instructions
Preheat oven to 200°C (390°F).
Season the cod with olive oil, garlic powder, turmeric, paprika, salt, and pepper.
Bake the fish in a baking dish for 15–18 minutes or until it flakes easily with a fork.
Make the sauce: While the cod bakes, heat olive oil in a small pan. Sauté garlic until fragrant (1 min). Add coconut milk, lemon zest, lemon juice, and simmer for 5 minutes. Add cornstarch if desired for a thicker texture.
Combine: Pour the sauce over the baked cod. Garnish with fresh parsley.
Serve: With steamed rice, sautéed greens, or roasted vegetables.
